Dr. Weil says that mushrooms have a tough skin and are hard to digest if they are not cooked. Mushrooms also give off important nutrients when they are cooked, like B vitamins, minerals, and proteins.

Dr. Weil says that cooking mushrooms at a high temperature before eating them, such as by sautéing, broiling, or grilling, breaks down many of the toxins that could be harmful. People often say that broiling or grilling mushrooms is the best way to cook them.
